A panel has two faces, and both get finished
The obvious way to size a tin is length times width. For a 60 by 14 inch top that is 5.83 sq ft, and the real figure is 13.21 — 2.26 times as much. Sizing from the top alone would have you buy 5.2 fl oz where 12.2 is needed.

The underside is not optional even where nobody will see it. A panel sealed on one face takes up and gives off moisture unevenly across its thickness, and the result is a top that cups. Finishing the back is a structural decision that happens also to use finish — which is why the area you buy for is always at least twice what you can see.
Only the short edges are end grain
End grain drinks roughly 3 times what face grain does — the
cut cell ends behave like straws. But on a long panel it is a small part of the total: the two
short ends of this top come to 0.29 sq ft against
11.67 of face. Treating all four edges as end grain, which is the usual
shortcut, overstates what the piece will absorb.
Where it genuinely dominates is anything cut across the grain — a cutting board's ends, a
stack of short shelves, a run of small components. The rule worth carrying is that end grain
counts triple, not that end grain is a rounding error, and which of those matters depends
entirely on the shape of what you are finishing.
Coats multiply everything
Finish needed is exactly linear in the number of coats, so the coat count moves the answer as much as the area does. Three coats is three times one — an obvious point that is routinely left out of the arithmetic when someone buys a single tin for a project they intend to build up properly.

How much should I allow for waste?
Ten to twenty per cent covers what stays in the tray, the rag, the brush and the bottom of the tin. It is worth allowing, because running out midway through a coat is worse than having some left.
