A cup is not a cup, and a tablespoon is not a tablespoon
Recipe units are not standard between countries, and — this is the awkward part — the names give you no warning. A recipe written in Sydney and a recipe written in Ohio use the same word for measures that differ by a third.

The Australian tablespoon is the one that actually ruins things. At 35% larger it is well past the tolerance of anything raised with baking powder or bicarbonate — four tablespoons of oil is 59.1 ml by one reading and 80 ml by the other, a 21 ml gap in a single ingredient. The converter above uses US customary units, which is what most recipes online assume; if a recipe is Australian, its tablespoons are bigger than the ones here.
The pint inversion: smaller ounces, bigger pint
Here is the one that catches people who think they have the two systems straight. An imperial fluid ounce is 28.41 ml and a US fluid ounce is 29.57 ml — so the imperial ounce is the smaller of the two, by about 4%.
And yet an imperial pint is 568.26 ml against the US pint's 473.18 — a fifth larger. Both facts are true at once, and neither is a mistake. The two systems simply disagree about how many ounces make a pint: the imperial pint has 20 and the US pint has 16. The smaller unit, counted more times, gives the bigger container.
Within each system everything is exact, which is worth confirming rather than assuming:

Every one of those lands on a whole number exactly. The systems are individually coherent — all the trouble lives at the boundary between them, where the same word means two things.
Which points at the only reliable fix. If a recipe matters, cook it by weight. Grams are grams everywhere, a kitchen scale costs very little, and it sidesteps the other volume problem this page cannot help with: a cup of flour weighs substantially more scooped than spooned, and no conversion table knows which you did.

Frequently asked questions
Why does a cup of flour weigh differently from a cup of sugar?
Because density differs. A US cup of all-purpose flour is around 120 to 125 g, granulated sugar about 200 g, and butter about 227 g — nearly twice the flour. Any converter that gives a single figure for a cup regardless of ingredient is giving you a volume conversion dressed up as a weight.
How much does a cup of flour actually weigh?
Between about 120 and 145 g depending entirely on how it got into the cup. Scooping compacts the flour and can add 20 per cent; spooning it in loosely and levelling gives the lower figure. This variability is the strongest argument for a kitchen scale in baking.
Which cup does a recipe mean?
A US cup is 236.6 mL, a metric cup is 250 mL, and the old imperial cup was 284 mL. American recipes mean the first, Australian and New Zealand ones the second. The 6 per cent gap between US and metric cups is tolerable in a stew and noticeable in a cake.
Should I use weight or volume?
Weight, for anything baked. Ratios of flour, fat, sugar and liquid determine the structure of a bread or cake, and volume measurement introduces enough error to shift them. For soups, sauces and most savoury cooking, volume is entirely adequate.
How do I convert an oven temperature?
Celsius to Fahrenheit follows the usual formula, but gas marks are their own scale: gas mark 4 is about 180 C or 350 F, and each mark is roughly 14 C. Fan or convection ovens generally run 20 C hotter than their setting suggests, so recipes often say to reduce the temperature by that much.
What is a stick of butter?
A US convention: half a cup, 8 tablespoons, or about 113 g. Butter sold elsewhere comes in blocks of 200 or 250 g without the wrapper markings, so a recipe calling for sticks needs converting by weight rather than guessed by eye.
