Scale a whole recipe
Add the ingredients you are using, then scale the lot at once. Weights are rounded to the nearest gram because no kitchen scale reads finer, and the figures underneath were never that precise to begin with.
What the table is really claiming
Every row below is a density in disguise. Divide grams per cup by the 236.59 ml a US cup holds and you get the grams per millilitre the figure implies — and for the handful of entries that are a substance with a real density rather than a powder, that number can be checked against the substance.
Water is the control. If the arithmetic is sound a cup of it has to come out at very nearly 1 g/ml, and it does — 0.37% out. Milk, oil and honey all land within 1.20%. So when one entry misses by five per cent, that is the entry and not the method.

Butter is a mass wearing a volume's clothes. Its 227 g is not a measured cupful at all — it is half a pound, and it agrees to within 0.20 of a gram. American butter is sold in half-pound blocks printed with cup markings, so "one cup of butter" means "two sticks", a weight nobody ever poured. Butter's real density of 0.911 would make a genuine cup about 216 g, so the listed figure runs 5.32% heavy. It is the packaging, not a mistake — but it is the only row here that is answering a different question from the rest.
There is a second tell. All-purpose flour, Powdered sugar, Chopped nuts are all listed at exactly 120 g per cup. Those are three unrelated substances with no reason to share a density — 120 is a convenient number that got reused. 9 of the 16 entries are multiples of ten. These are cookbook conventions, not measurements, and they are perfectly good for baking as long as nobody mistakes them for physics.
Why the ingredient matters more than the country
Cups differ between countries, and the Cooking Converter covers that in detail — a US cup, a metric cup and an imperial cup span a factor of 1.20. But the ingredient spans a factor of 3.78, from rolled oats at 90 g a cup to honey at 340. Reaching for the wrong row on this page is a far larger error than using the wrong nation's cup, and it is the mistake that is actually easy to make.

How many grams in a cup?
There is no single answer, which is the whole point. A US cup holds 236.6 mL of volume; what that weighs depends on the ingredient. Flour is about 120 g, granulated sugar 200 g, brown sugar 220 g packed, butter 227 g, and water 237 g.
Why do sources disagree about a cup of flour?
Because measuring technique changes the answer more than the flour does. Dipping the cup into the bag compacts the flour and yields as much as 145 g; spooning it in and levelling gives around 120 g. Different cookbooks assume different methods, and few state which.
What is the right way to measure flour by volume?
Stir the flour to loosen it, spoon it lightly into the cup without shaking or tapping, then level the top with a straight edge. This is the method most modern recipes assume, and it gives about 120 to 125 g per cup.
Does this matter for cooking as well as baking?
Much less. A stew tolerates a 20 per cent error in almost any ingredient. A cake does not — too much flour relative to liquid produces something dry and tight, and the error is invisible until it is baked.
How many grams is a cup of rice?
About 185 g for uncooked long-grain white rice, which yields roughly three cups cooked. Different varieties vary: arborio is denser, and wild rice is lighter, so the figure shifts by 10 per cent or so across types.
Is a metric cup close enough to a US cup?
For most purposes yes, but not all. A metric cup is 250 mL against the US 236.6, about 6 per cent more. Across a whole recipe using several cups, that compounds into a noticeably wetter or drier result, so it is worth knowing which system a recipe was written in.
