How much meat a fish actually yields — typical boneless fillet percentages for eight species, so you can plan a meal from a catch.

Boneless-skinless yields; skin-on runs a few points higher, and a skilled fillet knife adds up to 5% over a rough one. Round fish with big heads (crappie) yield least; salmon and trout — where more of the body is usable — yield most. About half a pound of fillets per adult serving is the standard meal-planning figure.
Every species is quoted as the same band
Each row gives a low and a high, and the shape of that band is remarkably consistent across very different fish:

Every ratio lands between 1.200 and 1.286, mean 1.247 — each species worth about a quarter more at the top of its range than the bottom. That is not a fact about fish; a salmon and a crappie do not happen to share a variability. It is the signature of the same allowance applied to every row. So the band is about you, and the centre is about the fish.

6 of the 7 neighbouring pairs overlap. The single break is Striped bass against Trout — they touch at 45% and do not cross. So the table is really two clusters, and everything inside a cluster is hard to separate on yield alone. Catfish and Striped bass are quoted identically.
Counting all 28 pairings rather than just the neighbours, 9 strictly overlap — but the neighbour count is the meaningful one, since crappie and salmon obviously do not overlap and that tells you nothing.

The technique band is about 25% as wide as the entire species range, so species is the bigger lever and it is not close. But the smaller lever is the one you control, and inside a cluster it is worth a species step or two: a walleye filleted badly (32%) does worse than a largemouth filleted well (35%), even though walleye is the higher-yielding fish.
What it means at the cooler
Turned around into the question people actually have — how much fish do I need to catch — for a 0.5 lb serving of fillet:

Best case to worst is 2.4× the fish for the same dinner — Salmon at 0.83 lb against Crappie / panfish at 2.00. That gap is the honest reason a limit of panfish and a limit of salmon are not comparable hauls, and it is much larger than the difference between a good and a bad day with the knife.

Frequently asked questions
What yield should I expect?
Typically 30 to 45 per cent of whole weight as boneless skinless fillet, varying by species and by how the fish is built. Round-bodied fish with large heads yield less; long-bodied fish with small heads yield more. Skin-on adds a few percentage points.
Why is the yield so low?
Because a large share of a fish is head, frame, skin and viscera. On many species the head alone is a fifth of the whole weight. This is why buying whole fish at a low price per pound is not always the bargain it appears — the comparison has to be on edible weight.
Does filleting skill change the yield?
Noticeably, particularly on smaller fish where the margin for error is thinner. A careless job leaves meat on the frame, and the difference between a practised and an unpractised filleter can be several percentage points. A sharp flexible knife matters more than technique for most people.
What portion size should I plan?
Around 170 to 225 grams of boneless fillet per adult as a main course, less if the meal has substantial sides. Working backwards, that means roughly a pound and a half of whole fish per person for a typical species — which is more fish than people expect.
Should I keep the frames?
For many species, yes. Frames and heads make good stock, and there is often meat along the backbone and in the cheeks worth recovering. Discarding the frame throws away a meaningful part of what you caught.
Does this apply to bought fish too?
Yes, and it is useful at the counter. Comparing whole fish against fillets requires converting to edible weight, and the yield percentage is what makes that comparison honest. A fillet at twice the price per pound may still be the better value.
