Live weight becomes field-dressed at 78%, hanging at 75% of that, and boneless packaged meat at 55–72% of that again depending on species. Each sounds like most of it survives. Multiplied:

Across every species here, between 32% and 42% of the animal comes home as meat. The product is below every single factor that made it, which is exactly the direction intuition does not follow — the individual percentages all sound generous, and compounding does not care.

On a 150 lb deer, gutting costs the most pounds while boning out costs the largest share. Each step takes proportionally more than the last, because it is taking a bigger bite out of a smaller animal — so the three losses land within a few pounds of each other. Three similar losses is the honest picture, not one big one and two small.
Which number is your measurement, and which is the estimate
Entering a field-dressed weight makes the tool estimate live weight by dividing by 0.78, then immediately multiply back by 0.78 to fill the field-dressed row. Those cancel exactly, so the number you typed comes back unchanged.
Worth knowing which is which. The field-dressed row is your measurement; the live row is the only figure derived backwards from it. If 78% is off for your animal — and it varies with how much blood was lost and whether the lungs came out clean — the live figure is wrong and everything downstream of the field-dressed row is still right.
One place the range quietly disappears
The boneless row is honest about its uncertainty: 53 to 61 lb on that 150 lb deer, a spread of 8.8 pounds. The servings row underneath takes the midpoint and prints one number, 114. Carried through properly it is 105 to 123 servings at 0.5 lb each. Neither is wrong — a midpoint is a reasonable summary — but the two rows present the same uncertainty in different ways, one row apart, and the more precise-looking number is the less informative one.

Frequently asked questions
What is the difference between field-dressed and hanging weight?
Field-dressed removes the internal organs, typically taking off around 20 per cent of live weight. Hanging or carcass weight additionally has the head, hide and lower legs removed, taking off a further substantial share. The terms are used loosely and mean different things in different regions, which is why they cause so much confusion.
How much boneless meat should I actually expect?
Roughly 40 to 50 per cent of live weight for deer under typical butchering, and often less. People who have only ever heard the live weight are frequently surprised by how little goes in the freezer — bone, hide and organs account for most of the difference.
What affects the yield?
Age and condition of the animal, how much was damaged by the shot, how carefully it was butchered, and how much trim is discarded. A carefully butchered animal yields noticeably more than a rushed one, and shot damage can cost a meaningful share of a quarter.
How much freezer space do I need?
As a rough guide, allow around a cubic foot per 30 to 35 pounds of packaged meat. Vacuum-sealed packages stack far more efficiently than wrapped ones, which matters when a whole animal is going into a domestic freezer.
Should I age the meat?
Generally yes, if you can hold it at a controlled temperature just above freezing. Several days improves tenderness noticeably. Aging at uncontrolled temperature is not aging, and warm weather makes prompt processing the priority instead.
Are these figures reliable for any animal?
They are typical ranges rather than predictions. Individual animals vary a great deal with age, season and condition, and butchering practice varies as much again. Use them for planning rather than for settling an argument about someone's deer.
